Vinification
A wine produced from vineyards at 300 m asl with different exposures and soil composition: mainly clay mixed with sandstone. The vinification begins with the gentle pressing of the grapes and the immediate separation of the must from the skins. The fermentation takes place in stainless steel at low temperatures to preserve the aromatic varietal freshness. It ages for three months in stainless steel tanks, naturally decanting. Bottled on the 4th of February 2022.
