Vinification
Irisse is grown in the oldest estate Vermentino vineyards, which are sited at 300 metres’ elevation facing west. They are caressed by marine breezes advancing up the Ombrone river valley, which create conditions that encourage the classic golden hue and firm tautness of the Vermentino grape skins, as well as optimally-ripe aromas and tangy fruit. The Grechetto too grows in an old, northwest-facing vineyard where the grapes ripen more slowly and the harvest is later than elsewhere; it contributes to the elegance of Irisse’s structure and to the preservation of its appreciably crisp acidity. The must fermented in 40hl large oak ovals, then matured sur lie for 9 months. It was bottled on 15 July 2022.
