Vinification
A wine produced from a vineyard at 100 m asl, where the soil is characterized by calcareous and marl flysch mixed to clay. The temperate Mediterranean climate and the frequent sea breezes help the organic cultivation of the vineyard. Vines are trained to Cordone speronato and Guyot. The average age of the vines is 20 years. The fermentation is made 50 % in stainless steel and 50 % in used French oak barrique, where the wine ages for 8 months with frequent batonnage. After the blending the wine refine in bottle for some months.
